Prince Edward County has launched a Countylicious event where popular restaurants including Bocado, The Royal and Parsons Brewing Company offer prix fixe menus that celebrate the season’s best. If you can’t make a trip to Prince Edward County any time soon, try these farm-to-table recipes at home, including a Spanish-influenced salad, an autumnal-inspired seafood main and an apple and gingerbread cake.
Chef Stuart Cameron’s Ensalada Mixta
Bocado’s executive chef combined local Ontario and Spanish ingredients to create the Ensalada Mixta. “We gathered ingredients from nearby farms and then got busy preserving and pickling,” says Stuart, referring to the Pickled Blueberries and Crab Apples. “Bitter green salads always remind me of fall and winter, and they’ll hold up to this nice, rich dressing.”

Chef Albert Ponzo’s Autumn Scallops
The Royal’s chef created this dish for Prince Edward County’s Countylicious event to showcase the great vegetables the region has to offer, including radishes and brussels sprouts, and in-season seafood. “As the temperature drops, scallops are at their peak,” says Albert. It’s then all placed on top of a bed of rich, creamy cauliflower purée. “This dish looks much harder than it is, if you’re hosting this season, it’s a standout way to impress your guests.”

Chef Sean Finnerty’s Spiced Apple Cake
“For me, apples just scream autumn,” says the chef at Parsons Brewing Company. After Sean created the cake for a special Harvest-themed dinner, he got so many questions about the dessert from customers and even staff, that it has become a permanent fixture of the menu. “The mixture of sweet and tart Ontario apples, paired with gingerbread spices and rich ice cream is the perfect end to a hearty meal.”
